Butternut Soup Recipe with Crickley Dairy Fresh Cream

Butternut soup is a favourite in our home during winter. This is a simple and easy butternut soup recipe. The cream is the ingredient that makes the soup, so don’t forget to add your Crickley Dairy Fresh Cream


1 onion, peeled and chopped

1 medium/large butternut

50g butter

300ml chicken stock

1/2 teaspoon cinnamon

125ml Crickley Fresh Cream


Melt the butter in a saucepan. Add the onion and sauté for 1 minute. Add butternut, chicken stock and cinnamon and bring to the boil. Reduce the heat, cover and leave to simmer for 15 minutes or until the butternut is soft. Remove from heat and add cream. Blend soup until smooth (I use a stick blender to do this, but you can use a food processor too).

Makes 4 servings.
